14. Perfect Dinner Rolls

The actual name of the recipe isn't the 'perfect dinner roll', but since I tweeked the look of the rolls I changed the name. Name aside, these rolls were super good! My only complaint is the amount of time it took me to complete them. But I suppose that's what happens when you have to use yeast. You have to wait. And patience isn't one of my virtues aparently.

Like previously mentioned in the biscuit post, Tasty Kitchen is often my go to site when I need a simple recipe for something like dinner rolls. I don't really have cookbooks or even a recipe that's been passed down in the family, so I just find ones to make my own. This one was easy enough - and I liked it. And so did my family.

You'll need water, sugar, 2 packages of yeast, milk, butter, salt, 3 eggs & flour.

I started by mixing warm water, yeast packets & sugar together. I did this in a small bowl (boy do I wish I had step by step pictures for this one), in which it proceeded to expand right out of.

I added warm milk, melted butter, sugar (which I'm now thinking I actually forgot), salt, 2 eggs & a little flour to my mixer bowl. It said to mix it on low, which I did. Then I couldn't figure out after I read the recipe 3 times where exactly the yeast was supposed to go in. Weird that I should have just put the yeast right in the mixer bowl in the first place then add the list of ingredients to that. Weird. But I eventually figured it out. Then it made sense. I think.

Now, I'll admit right now that I'm intimidated by bread. I've made a couple of really bad rosemary rounds (dare I admit I've cooked something bad), and some not so good beer bread. I was afraid to mess this one up.

I continued to add in flour until the bowl was just about empty. I scraped the sides as needed. The recipe says you'll have a little flour left over that you can kneed in, as the dough needs 10 minutes of kneeding - but I allowed my KitchenAid to kneed it for the majority of the time. I gave it a few minutes by hand as I worked it in to a ball to place it in a bowl to let it rise.

30 minutes in to 1 hour worth of rise time. Looking pretty darn good at this point. I had the oven on because I was making cupcakes at the same time, so I sat the bowl over the warm spot on the stove top which really helped with the process.

After the dough had risen an hour I punched it down and let it rest for about 15 minutes. After that I began dividing the dough. I cut it in half, then the halves in half and so on, until I had 48 pieces. I rolled the pieces in to little balls and placed 3 (instead of the 4 the recipe states) each in to the cups of the muffin tin. I like odd numbers better and I was trying to get just a few more rolls out of my batch without having to double the recipe. Worked out nicely.

Gave them about 15 minute to rise before brushing them with a combo of water & an egg yolk and popping them in the oven for 10 minutes. They baked up golden and beautiful.

The smell of fresh baked bread is heavenly. Almost as heavenly as the cupcakes were.

I found the most springy looking towel I had in my drawer and put it in a very spring colored Pyrex bowl and started stacking the rolls inside. When I had both batches done, they were wrapped up and tucked in to the bowl and looked awfully darn cute on my mom's table. Best part, they tasted awesome.


Lucky Four-Leaf Clover Rolls
aka the Perfect Dinner Roll


•½ cups Warm Water, 105-110 Degrees
•1 teaspoon Sugar
•2 packages Yeast (.75 Ounce Packets)
•¾ cups Milk, Warmed To 105-110 Degrees
•4 Tablespoons Butter, Melted
•⅓ cups Sugar
•1-½ teaspoon Salt
•2 whole Eggs
•4 cups All-purpose Flour
•1 whole Egg Yolk
 
 
Combine warm water, 1 teaspoon sugar and yeast in a mixing bowl. Let stand for 5 minutes. Yeast will foam and expand.
 
Using an electric mixer on low speed, add milk, butter, 1/3 cup sugar, salt, eggs and about 1/2 cup flour. Continue adding 1/2 cup of flour at a time, scraping down bowl occasionally, until a soft dough forms. You may have as much as 1/4 to 1/3 cup of remaining flour.

Turn dough out onto floured surface and knead in the remaining flour. Continue kneading dough for 10 minutes, adding just enough flour so dough won’t stick. Form dough into a ball and place in a large greased bowl, turning the dough to cover with oil. Cover loosely and let the dough rise in a warm spot for one hour, or until doubled in size.

Punch down dough and return to floured surface. Let it rest for 10-15 minutes. Divide dough in half, and then continue dividing each piece until you have 48 individual pieces. Spray a 24-cup muffin pan with cooking spray. Roll dough pieces into balls and place four balls into each muffin cup. Cover muffin pan and let rolls rise in warm spot for 30 minutes.

Preheat oven to 400° F. Mix egg yolk with two teaspoons of water and brush egg wash over tops of rolls. Bake in 400° oven for 10-12 minutes, watching to make sure the tops don’t burn.

Guess what I did?

Signed up for another 5k race.

Wanna know when it is? Two weeks earlier than the first 5k I signed up for.

Meaning I have a 5k race on Saturday. As in this Saturday. As in the day after tomorrow. Oh boy.


If I don't have a goal, I lack motivation. I don't want to disappoint my hard working momma, so I signed up for a race two weeks prior to ours. It's only a mile down the road from my house, so why not. Right? A coworker (and a fellow runner) encouraged me to sign up for our local half marathon. Um, no. A no then solicited the encouragement of signing up for the 5k fun run the day before the half marathon. After a ton of pestering, I mailed in my registration. The day before the postmark date, if you can believe that. Believe it.

This same coworker took me out for a run on Saturday on the course. It was a great run. I feel like I did really well. I pushed myself harder than I would have alone. I was happy there was someone to not only be accountable to, but someone to also prove my strengths to. It was really motivating. She's offered to help me with my training a couple days a week. There's no way I could pass that up.


I've chosen to join the ranks of Nike+. I signed up for my profile online and began looking through what they have to offer. I decided to order a sensor and received my email today letting me know my sensor shipped.
I don't have Nike's sensor ready shoes (I'm way too in love with my New Balance), so I've also ordered a little sensor pouch for my shoe. I'm considering myself smart for buying my husband his iPod Nano for Christmas in 2008. It will work perfectly with my Nike+ sensor. Who wouldn't want to track their runs? Time, distance, pace. This is starting to sound really good, right? I think so.



After reading Ange's post over at Swell Little Life, I decided it might be a good idea to start getting a little more organized with my running time too. I enjoy being active and like the way it makes me feel, but I sometimes just get too caught up in "relaxing" to really get out and enjoy what running has to offer. I've got my workouts planned on my Google calendar through May 1st right now.

I had intended to run right after work this morning. I even packed my bag of running gear to get me going down at the waterfront where the course is on Saturday. Then the weather went and put a damper on my running. A damper of sideways rain and wind that snapped power poles at the base. The wind is still beating the side of my house as I type this now. I intend to get up early to run before work, weather pending. Here's to hoping.

13. Chocolate Chip Cupcakes with Cookie Dough Frosting

I'm so excited to be posting my very first dessert recipe! I started noticing that I post nothing but main dishes, and perhaps some might like the occasional sweet. Not that I don't have a sweet tooth, I just have too much of one and the only way I have control over it is by not making desserts. But Easter was a different story, I thought I'd try my hand at homemade cupcakes.

Though I don't have step by step pictures for this recipe, I did have fun taking a few the night I was prepping for Easter. Over a couple hours time I pounded out four completely separate recipes. I become more and more organized in the kitchen every time I cook and I had so much fun making these.

This is the fluffiest, tastiest cake batter I've ever eaten in my entire life. It was almost a shame to bake this.

I don't think I'd be me if I didn't forget at least one thing per recipe. Just so happened cupcake papers were the forgotten item this time around.

It says to bake them 20-25 minutes at 350 degrees. You'll obviously know what amount of time will be best for you given how your oven cooks. In my opinion, mine is a little warm. I cooked these for 22 minutes, but I think next time to ensure they stay moist for a few days I'll only put them in for about 19 minutes.

The frosting was light and fluffy and very rich. It also had chocolate chips which was a nice little treat when you came across a bite with one in it. The frosting was so good. It contained butter, powdered sugar, vanilla & sweetened condensed milk. The longer you beat it, the fluffier it gets.

There's no method to frosting, just slather it on. The more the better in my opinion. But I'm a frosting kind of girl!

All ready to go. We loved them fresh that night. So tasty. This plate went to my parent's for Easter, the four in the background stayed home for us and I ate them for breakfast Monday morning.

I doubled my recipe for 2 dozen cupcakes. I measured my batter out in to the cupcake tin with a 1/4 cup measuring cup and it created 24 perfect cupcakes. If you were to whip up a dozen of these for an after dinner treat one night you'll have them done, start to finish in probably 45 minutes. Almost easier than dinner!

I loved them. Loved, loved, loved them. And I'll be making them again and again.

Chocolate Chip Cupcakes
makes 12 cupcakes

1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup milk
1 cup chocolate chips

 
Preheat oven to 350.

Cream butter, sugar, and eggs together until fluffy. Add vanilla.

Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Add chocolate chips and mix if you’d like them in smaller pieces.

Pour into cupcake tins and bake for 20-25 mins at 350. Let cool, then frost.

 
Cookie Dough Frosting

2 sticks butter, softened
1 1/2 – 2 lbs powdered sugar
1 teaspoon vanilla
1-2 tablespoons sweetened condensed milk
1/2 cup chocolate chips

Mix butter and powdered sugar together, adding sugar gradually to the mix. Add vanilla. Mix in milk, adding more if needed. Continue to add milk and sugar until it reaches the desired consistency. Mix in chocolate chips.

12. Easy, Flaky, Buttery Biscuits

This isn't exactly a new recipe, however it is a new one for the year. I just didn't follow it through step by step the last time I made it. These are the biscuits I used for the biscuits & gravy the morning I also made the apple fritters. By far, these are the best biscuits I've made.

I had a recipe I had been using for a while but somehow had misplaced the web address when I went to make them again. When I'm in need of something quick and simple, I turn to Tasty Kitchen for recipes others have posted. And along came the new biscuits! Let's get on to some early morning baking, shall we?


You'll need flour, baking powder, sugar, cream of tartar, salt, butter, 1 egg & milk. I aparently didn't realize I needed cream of tartar until after the photo.

Early morning baking wouldn't be complete without a cup of coffee.

Add 3 cups of flour to a bowl.


Next add 4 1/2 tsp. baking powder, 2 tbsp. sugar, 3/4 tsp. cream of tartar & 1/2 tsp. salt.

Mix all of your dry ingredients together.

Add 3/4 cup of cold butter.

Cut in the cold butter with a pastry cutter until the butter is in small, pea sized chunks. I don't have a pastry cutter, so I used my pizza cutter. Sounds weird, but it works. And yes, I'll get a pastry cutter eventually.

Mix 1 slightly beaten egg with 1 cup of milk and add to the rest of your ingredients. Stir to combine until you have a soft dough ball. I found it to be a little easier to mix with my hands to get it well combined.

I found this to be extremely sticky so I added a little extra flour and covered the outside of the ball before turning it out on to the counter to kneed for 30 seconds.

I lightly floured the counter and took small sections of the dough at a time and patted them out to about 3/4 of a inch thick. The recipe stated to roll them to avoid flakiness, but we like rustic, flaky looking biscuits. This was the tiny bit left over after 12 biscuits made it on to the baking tray. My husband always polishes off the last of the dough.

12 fresh cut biscuits. You could use a biscuit cutter if you have one, I just used the mouth of a small glass. Place them on a lightly greased baking sheet and pop in the oven heated to 450 degrees for 10 minutes.

Here they are, beautiful and golden. I love how high they've puffed up with all of their flaky cracks.

There is nothing better than homemade. Warm, melt in your mouth, rustic, buttery biscuits.

Serve them with homemade sausage gravy or even Kate's Chicken Noodle Soup! You'll love them.

•1 whole Egg, Slightly Beaten
•1 cup Milk
 
Preheat oven to 450 degrees.


Mix dry ingredients together.
Cut in cold butter, until it is pea-sized.
Mix egg and milk, pour into the dry mix.
Stir together with a fork.
Combine all the dry mix with the wet mixture until it forms a soft ball.

Turn out onto a floured counter.
Pat down until 3/4″ thick (rolling will keep it from being flaky).
Using a biscuit cutter (or whatever you have handy), cut biscuits out and place on an ungreased pan.
Bake for 10-12 minutes until golden and beautiful.

Our Easter

This Easter was the first I've spent with my family in 4 years. When I took my job almost 4 years ago, it put a damper on holidays. We work 24 hours a day, 7 days a week, 365 days a year. There's no break for us, and holidays aren't an exception. It's not something that really bothers me, but when there is a holiday I have off, big or small, I'm pretty excited about it!

We went to church with my parents in the morning. We haven't been to church in quite a few months, and we really enjoyed being there. The music and message were wonderful. It so nice to be reminded of what God has done for us. I enjoy reflecting on my blessings and being around others who hold the same beliefs as I do.

The cooking for this meal was really quite fun. Four of us had something to contribute and made for a really great meal. We've never been a family to branch out and try new things until recently. We've always been really traditional with our holiday meals, but over the last few years as our holiday celebrations have become more concentrated we've made a few changes.

The Tulip Festival is in full swing in Mount Vernon, and my mom has splashed the fresh tulips throughout her house. What's more spring than tulips?

Everything together made for a beautiful plate. This was an incredibly healthy and light meal. The potato salad & asparagus salad were both taken from Cooking Light. Turkey is always a healthy choice, topped with organic turkey gravy. The dinner rolls & raspberry lemonade punch were the splurge of the main course.

Easter Decadence

Happy Easter everyone!


I've been hard at work prepping my portion of our decadent Easter feast. This year we'll be attending church with my family and having dinner at my parent's house afterward. I think 2006 was the last year I attended an Easter service at church and I'm really looking forward to being with my family.

I chose to try two new recipes for our dinner as we don't have a traditional Easter dinner in our family. We've put together quite the menu, if I do say so myself!
